veggies, veggies everywhere!

OH EM GEE! I have never eaten so many veggies in so short a time! My mom would be so proud! When I was growing up, we heard about the starving children in India (I know! they've been all over the world, those starving children!) and we were told to eat everything on our plates because of them. So we ate! and we ate! and we ate!
Think about our dinner plates for a moment. On any given night, those plates would be filled with meat, veggies and pasta or potatoes. Bread was a regular, too. Nothing wrong with that, right? Not at all. HOWEVER...... what percent of that plate was full of veggies?? For me, it was usually about 25%. The meat and potatoes/pasta each took up about 30%. A piece of bread or a dinner roll would fill the empty space for our total of 100%. These days, I need to rearrange my plate. Keeping in mind that I am giving up "white" and "roots," my 25% potato/pasta is gone all together! Bread is another 15% gone. Now I'm down to 60% as much food as I had on my plate when I started!! How is a body supposed to survive on 60%? Easily, but that's not what we're here for! We're here to fill that plate! But with what?? VEGGIES! High cholesterol means that I need to lower my fat intake, so I can't really fill my plate with meat, now can I? A body can only take so much vegetation, though. There's got to be something I can do!

How about.... learn to cook something different!
